Camel milk is well known for its richness in mineral. It can be considered a potential source of minerals and trace elements for the human population in drought areas.
The concentration of all major minerals such as Ca, Mg, P, Na, and K in camel milk seems to be similar to those of cow’s milk.
It was found that the concentration of citrate in camel milk (128 mg/100 ml) is lower than in cow’s milk (160mg/100ml). The low level of citrate in camel’s milk may be its excellent advantage in medicinal properties since lactoferrin activity is enhanced with low levels of citrate.
Although minerals comprise less than 1% of the milk, they influence its rates of coagulation and other functional properties. The mineral content of camel’s milk expressed in ash ranges from 0.6% to 0.8%.
